Would it make sense to specify a relation type stylesheet that links to style information for vector and raster data? For example SLD, MapLibe/MapBox Styles, OpenLayers Flatstyles, QGIS Styles, etc.
There should be a way to refer to these links from the assets.
Ideally this would align as much as possible with OGC API - Styles.
Otherwise, I could also create a separate styles extension for STAC.
