The standalone rustfs/rc image is used because the rc CLI is not included in the main rustfs/rustfs image. A volume is mounted to persist the rc configuration so that the alias and credentials created by rc alias set remain available to subsequent rc commands executed in separate rustfs/rc containers.

Description
Following #381, the MinIO Docker images have been removed from Quay too. This PR migrates from MinIO to RustFS which has been designed as a literal drop in replacement for MinIO and they had an official release a week ago.
