r/python v1 are planned for deprecation by 1st March 2027. The use of "latest" as an image version will also be deprecated, as it is a (confusing) alias to v1. This adds notes on the scheduled deprecation, removes the suggestion to downgrade r actions to match the codespace version (currently still v1), removes some references to "latest", adds a description of the new r:v3 and updates example r code to use r:v3.

r and python v1 are schedule for deprecation by 1st March 2027.
This adds a note on planned deprecation to the description of action images, and removes the recommendation to downgrade to r:v1 in order to use the native r in codespaces.
