Adds a production sizing guide to the Platform Engineer Guide (Platform Setup), with an interactive per-plane calculator.

  • Field guide: what each plane runs, what drives its size, and HA configuration
  • Calculator: workload inputs, optional workflow/observability planes, observability stack picker (OpenSearch, OpenObserve, AWS, Azure, Google Cloud)
  • Every figure traces to benchmark measurements, vendor capacity-planning docs, or chart requests

Refs openchoreo/openchoreo#3916

A field guide to sizing a production install: what each plane runs,
what drives its size, and how to run it HA, with an interactive
per-plane estimator. Figures trace to benchmark measurements, vendor
capacity-planning docs, or chart requests.
