docs: update custom chart type docs for the gallery sidebar - #1237

The Explorer chart type picker moved from a dropdown in the left Configure panel to a gallery in the right sidebar, and the custom group was renamed from Project to Custom. Retake the affected screenshots in light and dark, align the copy, and document how saved charts pin a chart type version and upgrade to a newer one.

Description
The Explorer now picks chart types from a gallery in the right-hand Configure chart sidebar instead of a dropdown in the left panel, and the custom group is labelled Custom rather than Project. The docs still showed and described the old picker.
explore/chart-types/custom-project-charts): retook the gallery, builder, picker and mapping screenshots in light and dark against the current UI. Copy now follows the sidebar flow (Configure → Change → Custom, the New chart type tile, the Generated options panel, inputs in the General tab) and uses "custom chart type" throughout, matching the glossary. Page title is now "Custom chart types"; the URL is unchanged.The four external-connection screenshots from the previous PR already show the sidebar layout and are unchanged.
