SDKOptions.capture_content now defaults to true for online and offline spans. An explicit false still strips the transcript everywhere, including offline evaluation spans. Co-authored-by: christopher.schmitz <christopher.schmitz@launchdarkly.com>

Follow-up to #170. That PR stays capture-off. This branch starts from the current head of
ccschmitz/offline-eval-conversation-spans-17b3, so the diff is only the default change.SDKOptions.capture_contentnow defaults totrue. Online handler spans and offline evaluation spans use that same gate. An explicitfalseonconfigure, a handler factory, or a runner-written span still strips prompts, output, tool payloads, and judge explanations, including on offline evaluation spans. The$ld:ai:offline-evals:*events still carry no transcript.Test plan
