ci(release): use macos-15 runner for the arm64 macOS build - #50

macos-14 jobs are cancelled before a runner is assigned (the image is retired). Keep DIA_MIN_MACOS at 14.0 for now; if Homebrew bottles now require macOS 15, the strict minos check will flag it.

macos-14runners are cancelled before a runner is assigned (retired image), so the arm64 release job never starts. Usemacos-15instead.macos-arm64:runs-on: macos-14->macos-15DIA_MIN_MACOSstays14.0; if the Homebrew FFmpeg bottles on the new runner require macOS 15, the strict minos check will fail and the value must be bumped.Verification
