Hello, I was doing some research and found your repository. I would like to know if using your plugin it is possible to make users break the end_crystal in a blocked region, releasing only the end_crystal so they can break and kill the dragon.

Yes it seems possible. And you can choose the tool needed to break it.
Be careful, work only with WorldGuard.
