Chart.yaml does not follow SemVer 2 specification

Helm Chart.yaml does not follow SemVer 2 representation as specified in the official helm docs. Current version schema has has a leading v and no patch component.

Expectation: version: 0.73.0

I wonder if it's safe to fix this now, i.e., what happens to existing deployments that use --version v0.71.0 for example? Would they continue to work and pull the right version if we switch the tag format?

As long as the published chart artifacts remains available pulling older version should continue working.

Going forward Chart.yaml and artefact should use SemVer. Git tags probably should also gain the patch version for consistency
